Ingredients
  1. 3/4 cup butter
  2. 2/3 cup chopped onions
  3. 3 cloves garlic, chopped
  4. 1/4 cup fresh lemon juice
  5. 1 pinch salt
  6. 1 1/2 pounds large sea scallops
  7. 1/3 cup chopped fresh parsley
Instructions
  1. Preheat an outdoor grill for medium heat and lightly oil grate.
  2. Melt butter in a saucepan over medium heat. Cook onion and garlic until soft and translucent, about 5 minutes. Remove from heat, and stir in lemon juice and salt. Place scallops in a large bowl, and toss with butter mixture. Let stand for about 2 minutes.
  3. Thread scallops onto skewers, or use a wire grill basket. Cook on preheated grill for about 4 minutes per side.
  4. Return butter mixture to saucepan, and bring to a boil. Reduce heat to low, and keep warm while scallops cook. Toss with grilled scallops and serve

  2. Soy sauce
  3. Oil and vinegar dressing
  4. Green bell pepper
  5. Onion
  6. Tomatoes
Instructions
  1. Marinate scallops in mixture of 1/2 soy sauce and 1/2 oil and vinegar dressing for about 4 hours.
  2. Alternate scallops with chunks of green pepper, onion and fresh tomatoes on skewers. Grill outside about 20 minutes, or until scallops are done

Ingredients
  1. Makes 6 servings
  2. 1 tablespoon lemon juice
  3. 1 tablespoon instant coffee powder
  4. 1/4 cup melted butter or margarine
  5. 1/4 teaspoon onion powder
  6. 1/2 teaspoon salt
  7. 2 pounds catfish fillets
Instructions
  1. Combine lemon juice, instant coffee, butter, onion powder and salt. Brush mixture thickly onto fillets. Broil 3 to 4 inches from the outdoor grill for 10 minutes.
  2. Turn and brush fish again with sauce. Broil 10 minutes longer or until fish flakes easily. Brush the catfish again with the coffee butter and serve.
  3. If you prefer to broil in the oven, have the rack about 6 inches from the broiler and cook for about 4 minutes per side

Ingredients
  1. 1 1/2 pounds large shrimp (at least 31-40 count)
  2. 1/2 cup Italian dressing
  3. 1 fresh jalapeno pepper
  4. 2 ounces Monterey jack cheese
  5. 12 slices bacon, cut into thirds
  6. 6 bamboo Skewers
Instructions
  1. Butterfly shrimp by removing shell except for last tail segment. On underside of shrimp tails, cut nearly all the way through. Marinate in dressing for 10 minutes; reserve marinade for basting on the grill.
  2. Slice pepper in half lengthwise; remove seeds and slice into very thin "matchsticks"; set aside.
  3. Slice cheese into "matchsticks"; set aside.
  4. Place 1 strip of pepper and 1 strip of cheese in the center of each shrimp. Close shrimp, wrap with 1/2 slice bacon, and thread onto skewers (about six shrimp per skewer). Grill shrimp over medium heat for 5 minutes, turning and basting once. Shrimp are done when opaque throughout
Jalapeno Shrimp Skewers (( TIPS ))
  1. 4 ounces softened, unsalted butter
  2. 1/2 teaspoon ground cumin
  3. 1 tablespoon chopped cilantro
  4. 1/2 teaspoon finely chopped jalapeno
