Ingredients
  1. Makes 6 servings
  2. 1 tablespoon lemon juice
  3. 1 tablespoon instant coffee powder
  4. 1/4 cup melted butter or margarine
  5. 1/4 teaspoon onion powder
  6. 1/2 teaspoon salt
  7. 2 pounds catfish fillets
Instructions
  1. Combine lemon juice, instant coffee, butter, onion powder and salt. Brush mixture thickly onto fillets. Broil 3 to 4 inches from the outdoor grill for 10 minutes.
  2. Turn and brush fish again with sauce. Broil 10 minutes longer or until fish flakes easily. Brush the catfish again with the coffee butter and serve.
  3. If you prefer to broil in the oven, have the rack about 6 inches from the broiler and cook for about 4 minutes per side

Ingredients
  1. 6 eggs, separated
  2. 1/2 cup honey, plus more for garnish, divided
  3. 3/4 cup granulated sugar, divided
  4. 1 cup shelled walnuts, toasted and ground
  5. 1/4 cup all-purpose flour
  6. 1 teaspoon baking powder
  7. 2 teaspoons ground cinnamon
  8. 1 cup strong fresh coffee
  9. Vanilla yogurt for garnish
Instructions
  1. Preheat oven to 350 degrees F. Grease sides and bottom of a springform pan. Line base with parchment paper.
  2. In a medium bowl, beat egg yolks, 1/2 cup honey and 1/4 cup sugar until pale and creamy. In a separate bowl, combine walnuts, flour, baking powder and cinnamon; stir into creamed mixture.
  3. In a small bowl, whisk egg whites until stiff, stir 1 tablespoon into batter; fold in remaining whites until evenly incorporated. Pour batter into pan; bake 30 minutes or until cake has risen and shrunk slightly from the sides of the tin.
  4. Meanwhile, heat coffee in a small pan with remaining 1/2 cup sugar, stirring until sugar has dissolved. Boil 3 to 4 minutes or until syrupy. Cool cake about 5 minutes; transfer to a large plate. Spike all over with a skewer; drizzle with syrup. Cool completely; serve in wedges garnished with yogurt and drizzled with honey.
  5. Makes 8 servings

Ingredients
  1. 1/3 cup butter, softened
  2. 1/4 cup granulated sugar
  3. 1 egg
  4. 1 1/2 cups all-purpose flour
  5. 1 (3 3/8 ounce) box instant vanilla pudding mix
  6. 1 tablespoon baking powder
  7. 1/4 teaspoon salt
  8. 1 1/4 cups milk
  9. 1/2 cup chopped walnuts
  10. Topping
  11. 1/2 cup chopped walnuts
  12. 1/3 cup packed brown sugar
  13. 2 tablespoons butter, melted
  14. 1/4 teaspoon ground cinnamon
Instructions
  1. In a mixing bowl, cream butter and sugar. Beat in egg. Combine flour, pudding mix, baking powder and salt; add to the creamed mixture alternately with milk. Beat until blended. Stir in walnuts. Fill paper-lined muffin cups two-thirds full.
  2. Combine topping ingredients; sprinkle over batter. Bake at 375 degrees F for 20-25 minutes or until toothpick inserted near center comes out clean. Cool for 10 minutes; remove from pan to a wire rack.

Ingredients
  1. Pudding
  2. 1 1/3 cups all-purpose flour
  3. 1/2 cup dark molasses
  4. 1/3 cup boiling water
  5. 1 teaspoon vanilla extract
  6. 2 teaspoon baking soda (put into the boiling water)
  7. 2 cups raw cranberries, washed and cut in half
Instructions
  1. Sauce
  2. 1 cup granulated sugar
  3. 1/2 cup evaporated milk
  4. 1/2 cup butter or margarine
  5. 2 teaspoons vanilla extract
  6. Procedures : Oil sides and bottom of 1 pound coffee can and foil to fit top of can.
  7. Mix pudding ingredients.
  8. In large pan with top add 1 to 1 1/2 inches water. Place can with pudding and covered with foil in large pan and cover. When it starts to steam, turn on low and steam for 1 1/2 hours. Check water in pan and add if necessary.
  9. Take pudding out of tin immediately.
  10. Sauce: Mix sauce ingredients and bring to boil stirring constantly. Remove from heat. Serve warm over pudding
